A quick and easy stir-fry to clear heat and reduce internal fire; the aroma of eggs balances the slight bitterness of bitter melon; low in fat and high in protein.

Ingredients needed
1 bitter melon
3 eggs
5g of chopped green onions
3g of salt
10ml of cooking oil
1g white pepper powder
process
1. Remove the seeds and pith from the bitter melon, slice it thinly, add salt and marinate for 10 minutes, then squeeze out the excess water;
2. Beat the eggs, add salt and white pepper, stir well, scramble until cooked, and set aside;
3. Sauté chopped scallions in hot oil until fragrant, add bitter melon and stir-fry for 2 minutes, then add eggs and stir-fry until well combined before serving.
