Vegetable Washing Tips ✅ Clean & Nutritious, Super Easy!

Updated: Jan 15

Washing veggies is the first step of cooking and it’s way more important than you think 😉

Wash them wrong, you’ll lose nutrients; wash them right, you’ll eat with peace of mind.

🍃 Leafy Greens (Spinach/Lettuce/Chrysanthemum Greens)

1. Remove old and rotten leaves

2. Tear leaves apart from the roots

3. Add 1 tsp salt or flour, soak for 5-10 minutes

4. Rinse each leaf under running water, scrub the crevices💦

👉 Pro Tip: Don’t soak too long❌ Nutrients will sneak away

✅ Perfect for: Low-fat salads, home-style stir-fries

🥕 Root Vegetables (Carrots/Yam/Lotus Root)

1. Scrub off dirt with a stiff brush under water

2. Peel and rinse again

3. Soak yam/lotus root in light salt water to prevent oxidation and browning🥢

👉 Pro Tip: Wear gloves🧤 when handling yam to avoid itchy hands

✅ Perfect for: Sugar-control soups, home-style steaming

🥒 Cucurbits & Solanaceous Veggies (Cucumber/Tomato/Bell Pepper)

1. Rinse off surface dust with clean water

2. Soak cucumber in baking soda water for 3 minutes to remove wax

3. Gently wipe the surface with a scouring pad, don’t scratch the skin

4. Remove tomato stems before washing to prevent water from seeping in🍅

👉 Pro Tip: Rinse one more time if eating raw

✅ Perfect for: Low-fat raw dishes, home-style side dishes

🍄 Mushrooms (Shiitake/Enoki/King Oyster Mushroom)

1. Cut off shiitake stems, wipe crevices with a damp cloth

2. Cut off enoki root ends, tear into small clusters and rinse with gentle stirring

3. Wash king oyster mushrooms, slice them, and rinse again if needed

👉 Pro Tip: Don’t soak too long❌ They’ll absorb too much water and turn mushy

✅ Perfect for: Home-style stir-fries & stews, low-fat hot pot

❌ Common Mistakes to Avoid!

1. Soaking all veggies for too long❌

Leafy greens lose nutrients; mushrooms turn mushy

2. Washing with dish soap❌

Residues are harmful; salt or flour water is safer

3. Cutting before washing❌

Nutrients will run off, and pesticides can seep in easily

4. Scrubbing leafy greens too hard❌

Leaves turn mushy, ruining both taste and nutrients
