1. Peel and dice the tomatoes; cut the potatoes, carrots, and onions into chunks.
2. Heat oil in a pan, sauté the onions until fragrant, add the tomatoes and cook until they become mushy, then add tomato sauce and stir-fry evenly;
3. Add enough water, potatoes, carrots, and bay leaves, bring to a boil over high heat, then reduce to low heat and simmer for 25 minutes;
4. Season with salt, sugar, and black pepper, then cook for another 5 minutes.
