Paella is Spain's national dish. While its name includes "seafood," it doesn't necessarily contain seafood. The essence of this dish lies in the perfect combination of rice, broth, and the key spice, saffron. However, this time we're featuring a paella with seafood.

1. Wash and drain the rice; dice the bell peppers and onions, peel and dice the tomatoes, and mince the garlic.

2. Heat oil in a pan, sauté minced garlic and diced onion until fragrant, add diced chicken breast and stir-fry until it changes color, add shrimp, squid rings and mussels and stir-fry until half-cooked, add white wine and cook for 1 minute to remove the fishy smell;

3. Add diced tomatoes and bell peppers and stir-fry. Add water (enough to cover the ingredients), saffron, salt, and black pepper and bring to a boil.

4. Add rice, turn to low heat and simmer for 20 minutes until the rice is cooked through and the liquid is absorbed. Turn off the heat and let it sit for 5 minutes before serving.
