With its crisp and tender texture, tangy and spicy flavor, moderate GI value, and rich dietary fiber, this cold dish is suitable for people controlling their blood sugar and is perfect as an appetizer.

  • One lotus root (about 200g)

  • 2 small red chilies

  • 2 cloves of garlic

  • 1 sprig of cilantro

  • 1 tablespoon of light soy sauce

  • 1.5 tablespoons of balsamic vinegar

  • A pinch of salt

  • A few drops of sesame oil

process

1. Peel and dice the lotus root, blanch it in boiling water for 2 minutes, then remove it, rinse it with cold water, and drain it.

2. Slice the bird's eye chili into rings, mince the garlic, and chop the cilantro into sections;

3. Place the diced lotus root in a bowl, add chopped chili peppers, minced garlic, cilantro, light soy sauce, balsamic vinegar, salt, and sesame oil, then mix well.
