Bitter melon clears heat and reduces internal fire, while eggs replenish protein. Both are low in GI and calories, with a refreshing taste, making them a suitable everyday dish for those trying to lose weight and relieving summer heat.

  • 1 bitter melon

  • 2 eggs

  • 2 cloves of garlic

  • A pinch of salt

  • Half a spoonful of cooking oil

1. Remove the seeds and pith from the bitter melon, wash and slice it. Blanch it in boiling water for 1 minute to remove the bitterness, then drain.

2. Crack the eggs into a bowl, add a pinch of salt, and whisk well;

3. Heat oil in a pan, pour in the egg mixture and scramble until cooked into egg pieces; set aside.
