A hearty dish with a rich, savory sauce; the chicken wings are tender and fall off the bone; and the shiitake mushrooms are incredibly flavorful after soaking up the broth.

Ingredients needed
8 chicken wings
10 dried shiitake mushrooms
10g of scallion segments
8g of ginger slices
15ml light soy sauce
5ml dark soy sauce
5g of rock sugar
3g of salt
10ml of cooking oil
Appropriate amount of clean water
process
1. Soak shiitake mushrooms until softened, blanch chicken wings and drain.
2. Sauté scallions and ginger in hot oil until fragrant, then add chicken wings and fry until golden brown on both sides;
3. Add light soy sauce, dark soy sauce, and rock sugar, stir-fry to color, then add shiitake mushrooms and soaking water. Add enough water to cover the ingredients, simmer for 20 minutes until the sauce thickens, then add salt to taste.
